Baked Salmon Sushi Cups

Take your sushi night to the next level with these innovative Baked Salmon Sushi Cups, that are also Gluten Free!. Combining the classic flavors of sushi with a fun, new presentation, these cups are perfect for impressing guests or enjoying a unique meal at home. The combination of marinated salmon, creamy avocado, and the crunch of nori creates a symphony of textures and flavors that are as delightful to eat as they are to look at.


Ingredients -

- 3 nori sheets, each cut into 4 squares

- 1.5 cups cooked sushi rice

- 1 lb salmon, cut into small cubes

- 3 tablespoons olive oil

- 2 tablespoons soy sauce (or coconut aminos for a gluten-free option)

- 1 tablespoon rice vinegar

- 1 tablespoon honey

- 3 cloves garlic, minced

- 1 teaspoon sriracha

- 1/2 medium-large avocado, cut into small cubes

- Garnish: chopped scallions, black sesame seeds


For the Spicy Yogurt-Mayo Drizzle (optional):

- 1/4 cup Greek yogurt

- 1 tablespoon mayonnaise

- 1 teaspoon sriracha

- 1 small garlic clove, minced

- A squeeze of lemon

- Salt and pepper to taste


For the Dipping Sauce (optional):

- 3 tablespoons rice vinegar

- 1/4 cup soy sauce (or coconut aminos for a gluten-free option)

- 2 teaspoons sesame oil

- 1 teaspoon sriracha (optional)

- Garnish: scallions, toasted sesame seeds


Instructions -

1. In a mixing bowl, combine olive oil, soy sauce, rice vinegar, honey, minced garlic, and sriracha. Add the salmon cubes, ensuring they are well coated. Cover and marinate for at least 30 minutes, or overnight for enhanced flavor.

2. Preheat oven to 400°F (200°C). Prepare a 12-hole muffin tin by lining each slot with a nori square. Add a little more than a tablespoon of rice to each square, then press down gently to mold the nori into a cup shape along the sides of the muffin slot.

3. Place several pieces of marinated salmon into each cup, being careful not to overfill to leave room for avocado later.

4. Bake for about 15 minutes, then increase the oven temperature to 480°F (250°C) for an additional 1-2 minutes to brown the salmon.

5. Remove from oven and let cool slightly. Add avocado cubes to fill the gaps in each cup. Drizzle with the spicy yogurt-mayo dressing, and sprinkle with chopped scallions and black sesame seeds.

6. Serve the sushi cups with the optional dipping sauce on the side. Enjoy!
