Smashed Falafel Wrap
Smashed Falafel Wraps offer a delightful vegan twist on the classic falafel, combining crispy falafel with the soft chewiness of a tortilla. This recipe is not just delicious but also incredibly versatile, allowing you to enjoy the best of both worlds—crunchy and soft textures in one bite. Perfect for a quick lunch or dinner, these wraps are packed with fresh herbs, garlic, and warm spices, offering a burst of flavor with every bite. Serve with tahini, a fresh chopped salad, or your favorite sliced vegetables, and sprinkle with sumac for an added zing. Whether you like your tortilla crispy or soft, this dish is a satisfying and flavorful meal that's also entirely vegan.
Ingredients -
For the Falafel Mixture:
2 cups uncooked chickpeas
6 cloves of garlic
1 medium-large onion
1/2 cup parsley
1/2 cup coriander
1 teaspoon cumin
1 teaspoon salt
1 teaspoon crushed black pepper
3 tablespoons breadcrumbs
3 tablespoons olive oil
Olive oil for frying
Tortillas of your choice or thin flatbread pitas
Sumac (optional), tahini, chopped salad, or sliced vegetables for serving
Instructions -
Soak Garbanzo Beans: Soak the garbanzo beans for at least 12 hours, up to 24 hours, in room temperature water. Use a large bowl with plenty of water, changing the water a few times during the soaking period. The beans will double in size.
Prepare Falafel Mixture: Drain the soaked garbanzo beans and add them to a food processor along with all the falafel mixture ingredients. Blend until you achieve a unified green mixture, stopping occasionally to scrape the sides and incorporate everything together.
Assemble Tortillas: Grab a tortilla and spread an even layer of the falafel mixture on one side only. Repeat the process with the remaining tortillas. If you have leftover mixture, you can roll it into balls, spray with olive oil, and bake in the oven at 350°F (180°C) for 20-25 minutes until the balls are golden brown.
Fry Tortillas: Heat a pan with some olive oil over medium heat. Once the oil is hot, add the falafel mixture side of the tortilla. Fry for 4-6 minutes or until the falafel is browned. If you prefer a softer wrap, skip frying the other side. For a crispier wrap, fry both sides.
Serve: Serve warm with tahini, chopped salad, or sliced vegetables. Sprinkle some sumac on top if desired. Enjoy!
