Crispy Rice Paper Dumplings
Experience the ultimate in vegan and gluten-free snacking with these Crispy Rice Paper Dumplings. These delightful pockets are packed with fresh vegetables and meaty mushrooms, then wrapped in rice paper and fried to create a perfectly crunchy exterior. Served with a zesty dipping sauce, they make for an irresistible treat that’s both healthy and delicious.
Ingredients -
- 20 rice papers
- 2 carrots, grated
- 1/6 medium cabbage, grated
- 3 large portabello mushrooms, sliced
- 2 green onions, sliced
- 4 garlic cloves, minced
- 1 teaspoon grated ginger
- 3 tablespoons coconut aminos (or soy sauce)
- 1.5 teaspoons sesame oil
- Oil for frying
For the Dipping Sauce:
- 1.5 tablespoons rice vinegar
- 2 tablespoons coconut aminos (or soy sauce)
- 1 teaspoon sesame oil
- A small dash of sriracha (optional)
- Garnish: scallions, toasted sesame seeds
Instructions -
1. Heat oil in a pan over medium-low heat. Sauté mushrooms for a few minutes before adding carrots and cabbage. Once they begin to soften, incorporate green onions, soy sauce or coconut aminos, garlic, ginger, and sesame oil. Adjust seasoning to taste, then remove from heat and allow to cool.
2. Set up three plates: one with cold water for softening the rice papers, one for wrapping, and one to hold the finished dumplings.
3. Dip a rice paper in cold water until it softens. Place the softened rice paper on the wrapping plate, add 1-2 scoops of the filling, and fold into a tight packet, ensuring the edges are well sealed. For extra crispiness and to prevent tearing during frying, double wrap each dumpling.
4. Heat oil in a pan over medium-high heat. Once hot, fry the dumplings until golden brown on both sides, then transfer to a cooling rack.
5. Mix rice vinegar, soy sauce or coconut aminos, sesame oil, and sriracha in a bowl. Garnish with sliced scallions and toasted sesame seeds.
6. Serve the crispy dumplings warm with the dipping sauce on the side. Enjoy!
