Honey Glazed Roasted Red Cabbage

Ingredients -
- 1 small red cabbage, cut into quarters
- 2 tablespoons honey
- 3-4 tablespoons olive oil
- Salt and pepper
- Labneh cheese or Greek yogurt, for serving
- Garnish: chopped parsley, slivered almonds (preferably toasted)
For the Balsamic Vinaigrette:
- 3 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon apple cider vinegar
- 1 teaspoon Dijon mustard
- A pinch of salt
- A pinch of black pepper
- 1/2 small garlic clove, finely minced
Instructions -
1.Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
2. Arrange the quartered cabbage pieces on the prepared baking sheet.
3. Drizzle a generous amount of olive oil and honey over each piece of cabbage. Season with salt and freshly ground pepper. Rub the seasonings and olive oil into the cabbage to ensure thorough coverage.
4. Bake in the preheated oven for about 40-45 minutes until the cabbage softens. Then, increase the heat to 430°F (220°C) and roast for an additional 5-10 minutes to achieve a golden finish.
5. While the cabbage is roasting, prepare the vinaigrette by whisking together the olive oil, balsamic vinegar, apple cider vinegar, Dijon mustard, salt, black pepper, and minced garlic until the mixture emulsifies.
6. Place each cabbage steak on a bed of labneh cheese or Greek yogurt. Garnish with fresh parsley and slivered almonds. Drizzle the balsamic vinaigrette over the top and serve immediately.
