Honey Rosemary Roasted Potatoes

Unlock the secret to perfectly roasted potatoes with these Honey Rosemary Roasted Potatoes. Infused with the aromatic flavors of fresh rosemary and garlic, topped off with a hint of citrus zest, and a delightful finish of honey and Parmesan, this dish is a crowd-pleaser that complements any meal.


Ingredients -

  • 1 kg potatoes, peeled and cubed

  • Vegetable oil

  • 2 sprigs rosemary, finely chopped

  • 4 garlic cloves, minced

  • Zest of 1 lime or lemon

  • 2 tablespoons melted butter

  • Honey

  • Parmesan cheese, grated

  • Kosher salt


Instructions -

1. Boil the potatoes in salted water in a pot until fork-tender. Drain and dry the potatoes.

2. Preheat the oven to 400°F (200°C).

3. In a small bowl, mix together the melted butter, rosemary, garlic, and lemon zest. Set aside.

4. Coat a baking tray with a thin layer of vegetable oil and place it in the preheated oven for 8 minutes to heat the oil.

5. Carefully add the potatoes to the hot baking tray. Using a spatula, ensure they are well coated with the hot oil and spread them evenly across the tray.

6. Bake for 60 minutes, flipping the potatoes every 20 minutes. After the initial baking, pour the butter mixture over the potatoes on the tray and use a spatula to mix until the potatoes are evenly coated. Return to the oven for an additional 5-10 minutes until they reach the desired golden color.

7. Serve the potatoes hot, sprinkled with kosher salt, drizzled with honey, and topped with grated Parmesan.
