Hong Kong Style Mango Pancakes

These Hong Kong Style Mango Pancakes are the perfect blend of simplicity and sophistication. Ingredients -

  • For the Pancake:

    • 1 cup milk

    • 1/3 cup all-purpose flour

    • 1/4 cup cornstarch

    • 3 tablespoons powdered sugar

    • 3 eggs

    • 1 tablespoon butter (15g), melted

    • Yellow food coloring (optional)


  • For the Filling:

    • 1 cup heavy cream (250ml)

    • 3 tablespoons powdered sugar

    • 1/2 teaspoon vanilla extract

    • 2 large mangos, cut into large chunks


Instructions -

  1. In a large mixing bowl, whisk together milk, eggs, and melted butter until well combined.

  2. Sift the flour, cornstarch, and powdered sugar into the wet ingredients. Mix well for 2-3 minutes until the dry ingredients are fully incorporated, and there are no lumps.

  3. Strain the batter through a sieve to remove any remaining clumps. If using, gradually add a few drops of yellow food coloring until the batter reaches your desired tint.

  4. Heat a non-stick pan over low-medium heat. Once hot, pour in 1/4 cup of the batter and swirl the pan to create an even, level layer of the pancake.

  5. Cook the pancake on one side only for approximately 2-3 minutes or until no raw batter spots are visible on top. Remove from heat and place on a plate to cool. Repeat with the remaining batter.

  6. While the pancakes are chilling, prepare the whipped cream. In a mixing bowl, combine heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, whisk until stiff peaks form. Start on slow speed to avoid splashing, then gradually increase the speed.

  7. Assembly: Lay one pancake yellow side down on a plate. Add about 2 tablespoons of whipped cream in the center and top with a piece of mango. Fold the pancake from all sides to create a pocket, then flip it over to hold its shape. Serve cold and enjoy!
