Sweet and Salty Perfection: Crunchy Cornflakes Coated in Caramel and Dipped in Chocolate

Salted Toffee Cornflake Clusters
These Salted Toffee Cornflake Clusters are an absolute game-changer when it comes to sweet and salty snacks! Inspired by @melies_kitchen, this recipe brings together the buttery richness of toffee, the crunch of cornflakes, and an optional smooth chocolate dip. Whether you enjoy them plain or with a chocolate coating, these clusters are the perfect balance of flavors and textures. They’re quick to make, incredibly satisfying, and great for sharing—or keeping all to yourself. Perfect for a quick snack or a sweet gift!
Ingredients -
3 cups cornflakes
1/2 cup butter (120g)
1/2 cup brown sugar
1 teaspoon sea salt
1 teaspoon vanilla extract
400g semi-sweet or milk chocolate, flaky sea salt (optional)
Instructions -
Preheat oven to 350°F (180°C) and prepare a baking sheet with parchment paper.
Add cornflakes to a heat-proof bowl and set aside.
In a saucepan over medium heat, combine butter, brown sugar, sea salt, and vanilla extract. Stir until the sugar melts and the mixture starts to bubble. Cook for 1-2 minutes and then immediately pour over the cornflakes.
Using a rubber spatula, mix until all the cornflakes are well-coated in the caramel mixture.
Spread the cornflakes onto the prepared baking sheet in an even layer, about 1/2 inch thick (1-1.5 cm). Ensure the edges are the same thickness to prevent burning.
Bake for 10-15 minutes, rotating the baking sheet halfway through, until the cornflakes are golden brown and the toffee is caramelized. Keep an eye on it—aim for a dark amber color, but remove it early if the edges start to burn. Discard any burnt edges.
Let the clusters cool completely before breaking them into pieces. These can be enjoyed as they are, without the chocolate.
If using chocolate, melt it in the microwave in 30-second intervals. Use two forks to dip the clusters into the chocolate, letting excess chocolate drip off for a thin coating. Let the clusters harden in the fridge for at least 30 minutes. Enjoy!
