Korean-Style Rice Paper Noodles

Ingredients -
9 rice paper sheets
1 garlic clove, minced
1 stalk green onion, chopped
1.5 teaspoons chili flakes

1/2 teaspoon brown sugar
3 tablespoons neutral vegetable oil

Instructions -
1. Prepare your work station with one large bowl of lukewarm water and a medium bowl of cold water, and have a cutting board ready.
2. Stack three rice papers together and submerge them in lukewarm water for about 10-15 seconds until they begin to soften.
3. Transfer to a cutting board, smooth out any air bubbles, and cut into thick strips to create noodles. Immediately immerse the noodles into cold water to prevent sticking.
4. Repeat the process with the remaining rice paper sheets.
5. Drain the noodles and add them to a mixing bowl. Mix in garlic, green onions, chili flakes, chili powder, soy sauce, and brown sugar.
6. Heat oil until hot but not smoking, confirmed by the presence of bubbles around a chopstick inserted into the oil.
7. Pour the hot oil over the noodle mixture and gently mix to blend all the ingredients.
8. Garnish with cilantro and toasted sesame seeds and serve immediately.
