Parmesan Carrot Fries with Herbed Yogurt Dip

Ingredients -

For the Carrot Fries:

- 2 large carrots

- 2 tablespoons olive oil

- 1/3 cup parmesan, reserve some for garnish

- 1 tablespoon garlic powder

- 1 teaspoon onion powder

- 1/2 teaspoon salt

- 1/2 teaspoon black pepper

- 1/4 cup fresh parsley, chopped, reserve some for garnish


For the Dipping Sauce:

- 1/2 cup Greek yogurt (plant-based for vegan option)

- Juice of half a small lemon

- 3-4 sprigs of fresh dill, finely chopped

- 1/2 teaspoon salt

- 1/2 teaspoon black pepper

- 1 small garlic clove, minced

- Olive oil for garnish


Instructions -

1. Preheat your oven to 400°F (200°C).

2. Trim the tops and bottoms of the carrots, and slice them into thick, fry-shaped rectangles without peeling.

3. In a bowl, combine the carrot fries with olive oil, parmesan (reserve some for garnish), garlic powder, onion powder, salt, and black pepper. Mix well until the fries are thoroughly coated. Add most of the chopped parsley, reserving some for garnish.

4. Spread the fries on a baking sheet in a single layer. Bake for about 20 minutes or until they are crisp and browned.

5. While the fries are baking, mix together the Greek yogurt, lemon juice, chopped dill, salt, black pepper, and minced garlic. Garnish the top with a drizzle of olive oil.

6. Serve the baked carrot fries hot, garnished with the reserved parmesan and chopped parsley. Accompany with the herbed yogurt dip on the side.
