Phyllo "Khachapuri": Crispy Feta and Gouda Nests

Phyllo Khachapuri

This Phyllo Khachapuri is a unique take on the traditional Georgian dish, combining the crispiness of phyllo dough with a rich and savory filling of feta and gouda cheese. Created by the talented chef Ron Yohanan (@RonYohanan), this recipe transforms simple ingredients into an impressive and flavorful dish. The phyllo nests, with their golden-brown edges and creamy egg center, make for a perfect brunch or light dinner option. Add a touch of chili oil for an extra kick, and you've got a dish that's both elegant and comforting.


Ingredients -

  • 8 phyllo sheets

  • 3 tablespoons butter, melted (40 gr)

  • 4 eggs

  • Crumbled feta cheese

  • Shredded gouda (or other hard cheese)

  • Salt & pepper to taste

  • Chili oil/crisp for garnish (optional)


Instructions -

  1. Preheat oven to 350°F (180°C).

  2. Spread one phyllo sheet on a flat surface and brush with melted butter. Add another phyllo sheet on top and repeat with the butter.

  3. Sprinkle 2-3 tablespoons of crumbled feta cheese and 2-3 tablespoons of shredded gouda on top of the phyllo sheets.

  4. Using your hands, crumple the phyllo sheets by pulling two sides together (left and right), then repeat with the other sides, creating a nest shape. Transfer the phyllo nest to a baking sheet lined with parchment paper. Repeat steps 2, 3, and 4 with the remaining phyllo sheets.

  5. Carefully break an egg into each phyllo nest, ensuring you don’t break the yolk. Sprinkle with salt and pepper.

  6. Bake in the oven for 25-30 minutes, or until the phyllo nests are golden brown and super crispy.

  7. Serve warm with a drizzle of chili crisp if desired. Enjoy!
