Cauliflower Steaks with Yogurt-Tahini

Elevate your vegetarian meals with these Spiced Cauliflower Steaks, paired with a creamy Yogurt-Tahini Dressing. This dish blends the warm, aromatic flavors of spices like cumin and paprika with the cool, tangy zest of the yogurt and tahini. It’s not just a feast for the taste buds but also a visual treat, with the golden-brown cauliflower contrasted by the rich dressing and vibrant garnishes. Ingredients -

- 1 small-medium size cauliflower head

- 1/3 cup olive oil

- 1/2 teaspoon salt

- 1/2 teaspoon black pepper

- 1/2 teaspoon onion powder

- 1/2 teaspoon garlic powder

- 1/2 teaspoon cumin

- 1 teaspoon paprika

- Garnish: chopped parsley, slivered almonds, sumac, olive oil


For the Yogurt-Tahini Dressing:

- 1 cup Greek yogurt (plant based for the vegan alternative)

- 1/4 cup tahini

- 2 cloves of garlic, minced

- 3 tablespoons lemon juice

- 1/2 teaspoon salt

- 1/2 teaspoon black pepper


Instructions -

1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. Cut the cauliflower into 3/4 inch (2 cm) thick slices and arrange them on the parchment paper.

3. In a small bowl, mix together olive oil, salt, black pepper, onion powder, garlic powder, cumin, and paprika.

4. Brush the cauliflower steaks thoroughly with the spice mixture on both sides.

5. Roast in the oven for about 15 minutes, then carefully flip them and roast for another 10-15 minutes until golden and tender.

6. For plating, first spread the Yogurt-Tahini Dressing on the plate, then place the roasted cauliflower steaks on top. Garnish with chopped parsley, slivered almonds, sumac, and a drizzle of olive oil. Enjoy!
