Sun-Dried Tomato Cauliflower Tortillas
The creation of these Sun-Dried Tomato Cauliflower Tortillas was sparked by a simple desire to make our family dinners more exciting and colorful. The robust flavor of sun-dried tomatoes always reminds me of Mediterranean cuisines, which inspired me to blend them with the mild, nutty flavor of roasted cauliflower. Wrapped up with a tangy red slaw in a warm tortilla, this dish brings a burst of color and flavor that turns any meal into a special occasion. It's a perfect example of how a few simple ingredients can transform into something wonderfully delicious and visually appealing.
Ingredients -
- 4 tortillas (7-8 inches or 18-20 cm)
- 1 medium cauliflower head, cut into florets
- 2.5 tablespoons sun-dried tomato spread
- 3 tablespoons olive oil
- 2 teaspoons honey
- 2 teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 3/4 cup plant-based yogurt (or Greek yogurt)
- 1 garlic clove, minced
- 1/2 tablespoon lemon zest
- 1 Avocado, sliced
- for garnish - Cilantro, finely chopped
For Tangy Red Slaw:
- 1/8 red cabbage head, thinly sliced
- 1/4 teaspoon salt
- Juice of 1/2 a lemon
- 1 tablespoon olive oil
Instructions -
1. Preheat the oven to 430°F (220°C) and line a baking tray with parchment paper.
2. In a large bowl, combine cauliflower florets, sun-dried tomato spread, olive oil, honey, paprika, garlic powder, onion powder, and salt. Mix well until all the florets are well coated.
3. Spread the coated florets on the prepared baking tray and roast in the oven for about 30-40 minutes, or until the florets develop a rich, red-brownish char.
4. For the tangy red slaw, mix all ingredients in a bowl and adjust to taste.
5. For the yogurt spread, mix yogurt, minced garlic, and lemon zest. Add a pinch of salt to enhance the flavors.
6. Heat a small non-stick pan over low-medium heat and toast each tortilla until golden on one side, then flip to toast the other side.
7. To assemble, spread the yogurt mixture on a warm tortilla, add roasted cauliflower, tangy red slaw, and garnish with cilantro and avocado slices. Squeeze some lemon juice on top for an extra burst of flavor. Serve and enjoy!
