Cranberry Pistachio Biscotti
Whenever I need a quick yet satisfying baking project, these Cranberry Pistachio Biscotti are my go-to recipe. They're incredibly easy to make and never fail to impress with their delightful crunch and burst of flavors. With just a few simple steps, you can transform everyday ingredients like cranberries and pistachios into elegant biscotti that taste as good as they look. Perfect for pairing with your morning coffee or as a chic treat for guests, these biscotti deliver exceptional results every time.
Ingredients -
- 2 eggs
- 3/4 cup sugar
- 1 teaspoon vanilla extract
- 1/4 cup butter (60 grams), softened
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1.5 cups pistachios
- 1/2 cup dried cranberries
- 1 teaspoon orange zest
Instructions -
1. Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper.
2. In a large bowl, cream together the butter and sugar until well combined. Add the eggs and vanilla extract, mixing until the batter is well blended.
3. In a separate bowl, whisk together the flour, baking powder, and salt.
4. Gradually add the dry ingredients to the wet ingredients, mixing gently to just combine. Be careful not to overmix to maintain the tender texture of the biscotti.
5. Lay out a sheet of plastic wrap and place half of the dough in the center. Use the wrap to help form the dough into a log shape. Transfer to the prepared baking sheet and flatten slightly. Repeat with the remaining dough.
6. Bake for approximately 35 minutes, or until lightly golden. Remove from the oven and let cool for about 15 minutes.
7. Using a serrated bread knife, carefully slice the logs into 1/2-3/4 inch thick pieces. Lay the slices flat on the baking sheet.
8. Reduce the oven temperature to 275°F (135°C). Bake the slices for another 15 minutes, or until they are golden brown and dry
