Crispy Brown Butter and Sage Gnocchi

Explore the flavors of homemade gnocchi with this crispy brown butter and sage recipe. The combination of golden, crispy gnocchi with a savory brown butter sauce and a touch of sage offers a wonderful blend of texture and taste. It's a sophisticated yet comforting dish that elevates your dining experience.


Ingredients -

For the Gnocchi:

  • 1 large Russet potato

  • 1/2 cup all-purpose flour (more if needed)

  • 1 egg yolk

  • Salt and pepper to taste

  • Olive oil for coating


For the Sauce:

  • Olive oil for frying

  • 3 tablespoons butter (45g)

  • 1 sprig of sage

  • Salt and pepper to taste

  • Juice and zest of 1/2 lemon

  • Garnish - Grated Parmesan cheese


Instructions -


Making the Gnocchi:

  1. Preheat oven to 350°F (180°C).

  2. Rub the potato with olive oil, salt, and pepper. Pierce it several times with a fork and bake until fork-tender, about 1 hour.

  3. Let the potato cool slightly, then cut in half, scoop out the flesh, and mash it on a floured work surface.

  4. Mix in the flour and egg yolk into the mashed potatoes. Start with the amount indicated and add more flour if needed, but do so sparingly. Be gentle to prevent overworking the dough. The dough should be pliable and hold together.

  5. Divide the dough into two, roll each into a 1/2 inch thick strip, and cut into 1-inch pieces. Transfer pieces to a floured baking sheet and set aside.

  6. Boil salted water in a large pot. Carefully add gnocchi and cook until they float to the top, about 3-4 minutes. Use a sieve to remove them from the water and transfer to an oiled baking sheet.


Searing the Gnocchi and Making the Sauce:

  1. Heat olive oil in a pan over medium-high heat. Once hot, add the gnocchi and cook until golden and crisp on both sides.

  2. Reduce heat to medium, add butter and sage. Cook the butter for 2-3 minutes until it starts to brown, releasing a nutty aroma. Stir in lemon zest and juice, season with salt and pepper.

  3. Serve hot, sprinkled with grated Parmesan.
