Crispy Chicken Schnitzel Cutlets
Indulge in the ultimate comfort food with these Crispy Sesame Chicken Schnitzel Cutlets. Perfectly marinated and coated with a blend of breadcrumbs and sesame seeds, these cutlets are fried to golden perfection. Ingredients -
- 2 lbs chicken breast, thinly sliced (1 kg)
- 4 eggs
- 1 tablespoon mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon soy sauce
- 2 cups breadcrumbs
- 3 tablespoons sesame seeds
- 3 tablespoons black sesame seeds
- 1 tablespoon paprika
- 1 tablespoon garlic powder
- 1/2 tablespoon salt
- 1/2 tablespoon black pepper
- Frying oil
Instructions -
1. In a large bowl, whisk together the eggs, mayonnaise, mustard, and soy sauce. Add the chicken slices, ensuring they are well-coated with the marinade. Cover and refrigerate for at least 30 minutes, preferably overnight.
2. In a mixing bowl, combine the breadcrumbs, white and black sesame seeds, paprika, garlic powder, salt, and black pepper. Transfer this mixture to a wide dipping plate.
3. Remove the marinated chicken from the fridge. One by one, press each cutlet into the breadcrumb mixture, flipping several times and pressing with your fingers to ensure the coating adheres well. Place the coated cutlets on an empty plate.
4. Set up a large wire rack next to your stove, with paper towels or a drip tray underneath for easy cleanup.
5. Heat a medium or large skillet over medium-high heat and add a generous amount of oil, enough to cover the skillet completely to a depth of about 0.5-1 inch (1-2 cm). Wait until the oil is shimmering but not smoking.
Carefully add 1 or 2 cutlets to the skillet, using tongs to avoid splatters. Fry until golden brown on the bottom, then flip and fry the other side. If the oil is too hot and the cutlets brown too quickly, reduce the heat. Once cooked, transfer the cutlets to the wire rack. Repeat with the remaining cutlets, changing the oil and cleaning the pan halfway through.
6. Serve the cutlets hot, and enjoy the crispy, savory flavors. Enjoy!
