- Honey, for drizzling
- 20 g butter

- Juice of half a lemon
- 1-2 teaspoons honey
- Leaves from 1 sprig of thyme
- A little water, if needed
Instructions -
1.Carefully separate one phyllo sheet. Cut it to match the size of your feta slices, allowing an extra inch on each side for folding. Repeat for each slice of feta.
2. Melt the butter in a small bowl. Lay out a phyllo sheet on a clean surface, brush generously with melted butter.
3. Place a slice of feta at one end of the buttered phyllo sheet. Fold in the sides first, then roll the feta up in the phyllo, ensuring the sides stay tucked in. Repeat for all feta slices.
4. Heat oil in a pan over medium-high heat. Add the phyllo-wrapped feta, being careful not to overcrowd the pan. Fry until each side is golden brown, including the narrow sides. Transfer to a cooling rack.
5. In a small bowl, combine lemon juice, honey, and thyme leaves. Adjust the sweetness with more honey or dilute with a little water if too strong.
6. Serve the feta parcels warm, drizzled with honey and accompanied by the lemon honey dip.
