Rich Savory Nuts and Sweet Berries: A Crunchy Treat for Any Occasion

Walnut-Pecan Biscotti
Every batch of these Delightful Walnut-Pecan Biscotti brings back memories of cozy afternoons, filled with the aroma of baking that would waft through my home. This recipe combines crunchy walnuts, rich pecans, and a sweet mix of dried berries and dates, providing a satisfying texture with every bite. Ingredients -
- 2 eggs
- 3/4 cup sugar
- 1 teaspoon vanilla extract
- 1/4 cup butter, melted (or 60 grams)
- 2 cups of all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup walnuts
- 3/4 cup pecans
- 1/3 cup dried golden berries (or substitute with other dried berries)
- 1/3 cup dates, roughly chopped
Instructions -
1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
2. In a bowl, whisk together eggs, sugar, vanilla extract, melted butter, and salt until well combined.
3. In a separate bowl, mix together flour and baking powder. Gradually add this mixture to the wet ingredients, stirring until just combined.
4. Stir in walnuts, pecans, dried berries, and dates.
5. To shape the biscotti, lay out a sheet of plastic wrap and place half of the dough in the center. Wrap and roll the dough into a tube-like shape, then place it on the prepared baking sheet. Repeat with the remaining dough.
6. Bake for about 35 minutes or until lightly golden. Allow to cool for 15 minutes.
7. Carefully slice the logs into 1/2-3/4 inch thick pieces (1-2 cm) and lay them flat on the baking sheet.
8. Reduce oven temperature to 275°F (135°C) and bake for another 15 minutes, until golden brown and dry.
9. Let cool and enjoy!
