Spicy Pickled Cucumbers

Ingredients -
- 10 whole mini cucumbers
- 4 cloves of garlic
- 2-3 chili peppers (dehydrated or fresh, chopped for extra spice)
- Whole black peppercorns
- Fresh dill
- 1 teaspoon salt per 1 cup of water
- Optional: 2 tablespoons white vinegar per 1 cup of water
Instructions -
1. Quickly sterilize your mason jar by pouring boiling water over it and the lid. Empty the water and let the jar cool.
2. Place a handful of dill, a few chili peppers, garlic cloves, and some black peppercorns in the bottom of the jar.
3. Tightly pack the cucumbers into the jar. Slot in additional dill, garlic, and chili peppers into any gaps and at the top for extra flavor.
4. Fill the jar with fresh water mixed with salt (and vinegar if using). Ensure the salt is fully dissolved.
5. Tightly seal the jar and set it aside in a cool, dark place for 7-14 days. The exact time will depend on your taste preference for crunchiness and sourness.
6. Once opened, store the pickles in the refrigerator to maintain their crispness and freshness.
