Onigirazu - Crispy Fried Salmon Sushi Sandwich

Embark on a culinary adventure with this innovative take on sushi: the Onigirazu, or sushi sandwich, featuring crispy fried salmon. This dish merges the delightful crunch of fried salmon with the classic components of sushi, creating a sandwich that's both visually appealing and bursting with flavor. Perfect for sushi enthusiasts looking to try something new and exciting, this recipe will elevate your sushi experience to new heights.


Ingredients -

- 3 Nori sheets

- 2 cups cooked sushi rice

- 1-2 cucumbers, thinly sliced into strips

- 1-2 carrots, thinly sliced into strips

- 2 salmon steaks (about 4x4 inches, 1 inch thick, sliced into two thin cuts)

- 1/2 cup flour

- 1/2 cup breadcrumbs or panko

- 1 egg

- 2 tablespoons soy sauce

- 1 avocado, sliced

- Sriracha sauce

- Mayonnaise

- Oil for frying


For the Dipping Sauce (optional):

- 3/4 cup Greek yogurt

- 3 tablespoons mayonnaise

- 2 teaspoons sriracha

- 1 garlic clove, minced

- Juice of 1/4 lemon

- 1 teaspoon salt

- 1 teaspoon black pepper

- 2 sprigs scallions, thinly chopped


Instructions -

1. In a plate, whisk together the egg and soy sauce. Set up separate dipping plates for flour and breadcrumbs. Dip each salmon piece first in flour (coating all sides), then in the egg mixture, and finally in the breadcrumbs, pressing gently to ensure they stick. Set aside on an empty plate.

2. Heat oil in a skillet over medium-high heat for shallow frying. Once hot, fry the salmon for about 2-3 minutes on each side until golden brown. Transfer to a cooling rack and let cool.

3. Wet your hands slightly and form two square-shaped rice patties from the sushi rice, about 1/3 cup of rice each. Ensure they are compact and shaped to match the size of the salmon steaks.

4. Lay a piece of plastic wrap larger than a nori sheet on your work surface. Place a nori sheet in the center of the plastic wrap. Position one rice patty in the middle of the nori at a 45-degree angle. Layer on the fried salmon, followed by cucumber and carrot strips. Drizzle with sriracha and mayo. Top with the second rice patty. Fold the corners of the nori inward and add a 1/4 piece of nori on top to secure. Firmly wrap with plastic and reshape into a square. Cut in half and serve with dipping sauce.

5. Enjoy your Onigirazu with the prepared dipping sauce, savoring the unique blend of textures and flavors.
