Refreshing Watermelon Mochi

Ingredients -

  • 1 1/4 cups fresh watermelon juice, strained (about 300g)

  • 1 3/4 cups glutinous rice flour (220g), plus more for dusting

  • 1/2 cup cornstarch (60g)

  • 1/3 cup granulated sugar (70g)

  • 2 tablespoons butter, or neutral oil for a vegan option (30g)



Instructions -

  1. Prepare Watermelon Juice: Blend watermelon in a food processor until smooth. Strain through a sieve to remove pulp and seeds.

  2. Mix Dry Ingredients: In a large bowl, combine glutinous rice flour, cornstarch, and sugar. Gradually add the watermelon juice, whisking until smooth and ensuring no flour sticks to the bottom of the bowl.

  3. Microwave the Mixture: Pour the mixture into a shallow microwaveable dish. Cover tightly with plastic wrap, making sure it’s well sealed. Poke a few holes in the wrap with a fork or skewer. Microwave on high for 5 minutes.

  4. Add Butter: Carefully remove from the microwave and peel off the plastic wrap. Place the butter on top of the hot mixture and let it melt as it cools.

  5. Knead the Dough: Once cooled, begin to knead the dough, incorporating the melted butter. Continue kneading until the dough is smooth, stretchy, and elastic.

  6. Refrigerate: Line a rectangular container with parchment paper. Transfer the mochi dough into the container, spreading it evenly. Refrigerate for 2-3 hours or until firm.

  7. Cut and Serve: Dust a work surface with glutinous rice flour. Place the mochi dough on the floured surface and dust the top as well to prevent sticking. Using an oiled knife, cut the dough into bite-sized pieces. Enjoy!
