Rich Chocolate and Crisp Tops: A Gooey Delight Straight from the Oven

The Fudgiest Brownies
There's nothing quite like the smell of chocolate brownies baking in the oven to make a house feel like a home. These brownies are the ultimate remedy for me and my family's chocolate cravings. The combination of melted butter, bittersweet chocolate, and a hint of coconut oil creates a rich, gooey center and a perfectly crisp, crinkly top. Each bite takes me back to weekend baking sessions with my family, where we couldn't wait for the brownies to cool before sneaking a taste.
Ingredients -
- 1 cup flour, sifted
- 1/2 cup unsweetened cocoa powder, sifted
- 1/2 teaspoon baking powder
- A pinch of salt
- 3/4 cup of butter (1.5 sticks, 170g)
- 3 tablespoons coconut oil (or any neutral oil)
- 1.5 cups sugar, divided (0.25 and 1.25)
- 3 large eggs
- 3/4 cup bittersweet chocolate, roughly chopped (or chocolate chips)
Instructions -
1. Preheat the oven to 350°F (180°C). Line a 9x9 inch baking pan with parchment paper.
2. In a mixing bowl, whisk together flour, baking powder, cocoa powder, and salt. Set aside.
3. Melt the butter in the microwave in 30-second increments until hot but not sizzling. Stir in 0.25 cup of sugar until some of the sugar melts. Set aside.
4. In a large mixing bowl, whisk the eggs with the remaining 1.25 cups of sugar using a handheld mixer on the lowest setting. As the mixture thickens, gradually increase the mixer speed until the mixture becomes pale and thick.
5. Gradually pour the warm butter mixture into the eggs while continuously whisking to prevent the eggs from cooking.
6. Add the dry ingredients and chopped chocolate. Using a silicone spatula, gently fold until just combined and no dry ingredients are visible. Be careful not to overmix; the batter should be slightly sticky and shiny.
7. Pour the batter into the prepared baking pan, smoothing the top evenly.
8. Bake for about 30 minutes, checking to ensure the edges are firm and the center is set but still moist.
9. Allow to cool before slicing and serving. Enjoy!
